My FUCKING BEEF STEW. Shit is insanely fucking dank and easy. I MEAN INSANELY FUCKING DANK, You will eat this shit non stop for days. Here's what you need.
- Stew Meat
- Frozen Corn/Peas/Carrots Blend
- 1 Celery Stalk
- 1 Large Red Onion
- 1 Green Bell or Poblano Pepper (optional)
- Garlic Cloves (optional)
- 3-4 Large Potatoes or 5 small-medium ones of your favorite potato
- Beef Stock
- Worcestershire sauce, Salt, Pepper, Garlic Powder, Onion Powder
Talk about some hearty fucking shit? I've got it for you. Insanely Healthy and delicious as can beeeeeee.
Start off by dicing all your veg, onion, celery, pepper, garlic (mince), and Potatoes (medium dice). Start a large pot with 1tbs butter and a little bit of oil. Once Hot Drop all of your onions, celery, peppers in the pot.
Let cook 1-2 mins, Then place the stew meat in the pot, Cook until the veg is translucent and the meat is seared on the outside. Add garlic in the final minute, as I always say, DON'T BURN THE FUCKING GARLIC FOR THE LOVE OF GOD. Season with salt/pepper/op/gp.
Pour in the Beef Stock/Broth. Add Potatoes, Add Frozen Corn/Pea/Carrot blend, add water to top off the pot, boil. Boil for about 20 minutes or until the potatoes are soft. After that Bring to a simmer, add worcestershire sauce, season appropriately and kind of let it stew and simmer for 5-10 more mins and let all those flavors mellow.
It's so fucking simple, yet so fucking delicious, and So fucking good and healthy for you.
For some sweet fucking kicks you can pour over rice, add oyster crackers or add beans if you want some additional protein, a nice can of black beans couldn't hurt. Also Add a beer to the stew mix if your feeling frisky, i forgot about this, I normally use a Blue Moon. Ty Stantheman

I am looking for some inspiration. I am tired of my dinner rotation and need a dish or two to spice it up. It should be easy to prepare and easy to make

My current fall rotation, with quick weeknight meals interspersed with projects, longer cooking stuff-
Red Beans and Rice, with grilled chicken or sausage. (using canned beans, this can be on the table in the time it takes to make rice) Or, meatless, red beans and rice with a salad on the side. For variation: Black beans, or pinto beans. Yellow rice. Different seasonings. With the red beans, Cajun, but with the black beans, why not Cuban? Mexican? We eat this kind of thing weekly. Ties into the next meal....
Burrito bar: I make some protein, like carnitas, shredded chicken, or whatever, and provide a bunch of fixins, including (but not all the same things all the time) tortillas, leftover beans and rice, lettuce, avocado, tomatoes, peppers, sour cream, some kind of cheese, salsas and hot sauces. It's easy to make because all you really have to do is set things out while your meat is cooking, and let everyone else kinda put their own stuff together. You can do tacos this way, or nachos, or whatever. Easy would be ground beef or ground turkey seasoned for tacos. Hard would be slow roasting a pork shoulder for carnitas. All day, or a half hour.
In the same vein, I make Greek flavored protein like grilled pork or chicken, this can be as easy as marinating chicken breasts in lemon, olive oil, salt pepper, and oregano. Then set out assorted Greek mezze fixins, like pita, olives, feta, baba ghanoush, hummus, and have a big Greek salad on the side. So, everyone can make sandwiches, or just pile meat and stuff on their plate to have with a side of salad and bread. Turn this into a project meal by making falafel from scratch, instead of pork or chicken as well as the making hummus or baba ghanoush, and making the pita from scratch.
Something southeast Asian curry: I keep a wide array of curry pastes in the cabinet. Then, I look at what's good at the store and build a curry around it. Zucchini's on sale? That would be excellent with this haddock I also grabbed on sale in a green curry. Again, range of proteins, and look for tasty fresh veggies on special. Favorite combos: Beef, red curry, peppers and potatoes. Fresh string beans, green curry or massaman curry, and slivers of chicken. Any blend of veggies in any curry paste pretty much.
Something salad: Lettuce, whatever veggies hanging around (leftovers from burrito night? AWESOME.) in some appealing flavor combo. Grill up some steak, slice it into strips, add chopped veggies from Greek or Mexican night, make up a fast flavor appropriate dressing (or use bottled for super easy) have some fitting starch, and it's great.
Soup/sandwich: Corn chowder, tomato bisque, mulligatawny, chicken tortilla, French onion, tortellini and spinach, minestrone, tom yum, pho, chicken noodle, chicken and rice, stuffed cabbage soup, butternut squash or pumpkin, etc etc etc. Can be as easy as combining a few cans like beans, tomatoes, and chicken broth, or as elaborate as pho from scratch. My family is unhappy with only soup, so I generally make something sandwichy on the side. Recent success- roasted pumpkin soup with a barbecue chicken in slider buns.
Stewy things: beef stew in a few different ways (carbonnade, beef burgundy, or plain old American brown beef stew) chili (sweet potato black bean chili, good old beef chili, white chicken chili), chicken stew (which can morph into pot pie or chicken and dumplings). Cioppino or other seafood stew, Filipino adobo, Shepherd's pie, which can turn easily into an all vegetarian "pie" covered with cheesy mashed potatoes, or something with ground turkey.
Stuffed potato night: Something cooked and served over a hot baked potato. Often leftovers from stewy nights, dolled up with cheese, or sour cream or something. Leftover Mexican stuff is great too, cover a hot baked potato in carnitas and black beans with some salsa and guacamole, mmph.
Casseroley things: Enchiladas, lasagna, baked ziti, eggplant Parmesan, moussaka, this chicken/rice/cheese thing we love, tuna casserole (from scratch, not with cream of shit soup). These are usually awesome giant weekend projects, that take a few hours to do.
These are almost weekly staples in some combination, because I try to develop meals around what's on sale, and what flavor combos we're in the mood for. If chicken breasts are on sale, and that's all we can afford this week...then you can actually eat an entire week's worth of chicken and never get tired of it. If you buy a giant bag of lettuce from Costco, because it's cheap, then you can actually finish that whole bag, using this kind of cooking. Got a giant roast that you want to cook, but not eat roast beef all week? That works too. Cut it into portions, and make a little of it each night. Cuisines we are mostly inspired by: Mexican, Indian, Greek, Italian, Southern American, Southeast Asian.
TL;DR We're never bored by dinner, eat loads of veggies, and we have shit tons of excellent, varied, and interesting leftovers.
